These bliss balls are my take on fall’s most iconic beverage: the pumpkin spice latte. And just like a steaming hot PSL, these sweet treats contain coffee! The boost of caffeine, natural sugars, and healthy fats (hello, chia seeds!) make these the perfect pre-workout snack or morning pick-me-up.

Set time: ~1 hour
- 1/2 cup oat flour
- 2 Tbsp. finely ground coffee
- 2 Tbsp. ground chia or flax seeds
- 1 tsp. pumpkin pie spice
- pinch of salt
- 1/3 cup rolled or quick oats, plus more for topping if desired
- 1/2 cup pumpkin purée
- 2 Tbsp. almond butter
- 1/3 cup agave nectar
Combine all dry ingredients in a small mixing bowl until well incorporated. Combine all wet ingredients in separate bowl, then add to dry mix once smoothly mixed.
Wet your hands (this prevents the mixture from sticking to you) and form mixture into small balls. Place bliss balls in a parchment paper-lined container and let set in the freezer for about one hour. Once set, transfer to fridge and keep refrigerated until consumption.
